How to cut Potato Wedges?
Potato wedges are so easy to chop, but really hard to describe how to!!! So I have taken a step by step selection of photos below!!
However, if you want a laugh, read below whilst I try and describe with words!
Cut potato in half (½), cut that half in half again(¼). Then each quarter, in half once more (⅛), that will make 4 wedges..... repeat with the other half there will be 8 wedges. Repeat with other potatoes to make 24 wedges in total.
How hot are these spicy curried potato wedges?
You can adjust to your liking, if you want them mild simply use mild curry powder. This is mild enough for my kids to enjoy.
If you like them medium hot, use medium curry powder.
Finally if (like us) you want them hot, use hot curry powder! You can even add some extra chilli flakes too if desired?
How to season Potato wedges?
Pop all your seasonings in a bowl with oil and stir. Add wedges and flip them all through the seasoning.
Quick easy way to coat potato wedges?
I find the easiest, quickest and cleanest way to coat the potatoes is using a large ziplock bag, pop all the seasoning and oil in followed by the potato wedges, seal (releasing the air first) and give a good shake and rub to evenly coat!
Do I need to parboil potato wedges before oven cooking?
So the debate is out on this one...... I have tried both ways. The actual crispiness to me is the same.
After parboiling the cut wedges for 4-5 minutes, they take less time in the oven.
However, the time spent parboiling, not to mention the extra washing up doesn't save any time compared to just cooking them longer in the oven or air fryer. So we don't parboil first.
The only exception to this is when we are going to freeze a batch of wedges, more on this below (see Can I freeze Potato Wedges?)
How to make crispy Potato Wedges?
Most important step to making crispy wedges...... do not let them touch each other!! If oven cooking place all wedges skin side down.
If cooking in Air fryer do not overfill it. We have a large 5.5l Pro Breeze Air Fryer and can fit 24 wedges all in at once. If you have a smaller air fryer you may need to do in 2 batches of 12?
What temperature to cook Potato Wedges at?
The best temperature to cook wedges at is 200C/400F we use this temperature for both Oven cooking and Air fryer.
How long does it take to cook potato wedges in the oven?
In the oven potato wedges should take 30-35 minutes at 200C/400F fan. When placing skin side down you will not need to turn halfway through.
How long does it take to cook potato wedges in the Air Fryer?
In the air fryer potato wedges will take 15 - 20 minutes at 200 C it is best to turn them halfway through.
How to prevent soggy wedges?
To prevent soggy potato wedges, avoid overcrowding the pan you are cooking them in. Place them skin-side down & make sure there is space around each wedge.
Use 2 trays for oven if needed?
Or cook in two batches in the air fryer.
Can I batch prepare and freeze Potato Wedges?
If you wanted to make a batch of these Spicy Curried Potato wedges ahead of time or make a bulk batch for quick midweek meals without the prep?
Or maybe you just have a bag of potatoes that need to be used up?
Cut the potatoes into wedges, place in a pan of boiling water, boil for 4 minutes, remove drain and rinse wedges with cold water until, cooled.
Pat dry with kitchen paper or a clean towel. Now coat in seasoning and place on a baking sheet/plate which will fit in the freezer keeping them separated (not touching).
Place in freezer for about 30 minutes, by which time they will be frozen enough to transfer into a freezer bag without sticking together.
Cook in a preheated 200C/400F fan oven for 35 minutes.

Our Spicy Curried Potato wedges are great with so many things!!
Such as our finger-licking good Spicy Chicken Burger, Takeaway Chicken Kebab, our Zesty Italian Chicken Drumsticks, Sea Bream with Chilli and Garlic or Salmon en Croute
What to serve with Potato Wedges
There are loads of options!
Of course, you can just eat them as they are, sometimes we make a batch for a lunchtime treat! Great with mayonnaise, ketchup or BBQ sauce.

Spicy Curried Potato Wedges
Ingredients
- 3 Medium-Large Potatoes - about 470g ( 1lb)
- 1 teaspoon Curry Powder - We used hot, but you can use medium or mild to suit your preference.
- 2 Garlic Cloves crushed - (1 teaspoon of Garlic Puree)
- ½ teaspoon each of Salt & Pepper
- 2 tablespoon Olive Oil
Instructions

Repeat with other potatoes to make 24 wedges in total. Hope that makes sense? It is harder to describe than do!
- Place curry powder, garlic, salt, pepper and olive oil in a large bowl or a ziplock bag.
- Mix together
- Add the wedges and mix to coat
Oven Method- Fan 200°C/400°F - Preheated
- Place on a baking tray skin side down. Making sure they have space between each wedge to cook evenly. Use 2 trays if needed?
- Cook for 35-40 minutes, no need to turn if placed skin side down
Air fryer method - 200°C/400°F - Preheated
- Place in air fryer tray, allowing space between each wedge to cook evenly. Cook in 2 batches if you have a small air fryer.
- Cook for 15-20 minutes, turning the wedges halfway through.

What a great idea! Never thought to add some curry spices to wedges, which is silly because I always make curry with potatoes! Hahah! I always tend to parboil my potatoes. For some reason they turn on more consistent for me when I don't. And as you said, a tad quicker in the oven. These were so good!
