One-Pot Corned Beef Hash
Equipment
Ingredients
- 300 grams Potatoes
- 1 tablespoon Olive Oil
- 1 Large Onion - diced
- 2 cloves Garlic - crushed
- 1 teaspoon Paprika
- 1 tablespoon Worcestershire sauce
- 340 grams Canned Corned Beef - 1x Tin of corned beef chopped into small cubes
- 4 Eggs
- Sprinkle of Parsley - We used dried parsley to sprinkle on at the end!
- Salt & Pepper
Instructions
- Preheat oven to 200℃ fan / 220°C / 425℉ / Gas Mark 7Peel and cut 300 grams Potatoes into cubesBoil the cubed potatoes for 7 minutes. ( (If using canned potatoes, you will not need to parboil) Drain and allow to air dry.Cut 340 grams Canned Corned Beef into cubes.

- Make sure to use an oven safe pan. We used our Cast Iron Pan.Dice 1 Large Onion and gently fry it in 1 tablespoon Olive Oil for about 5 minutes, or until soft.

- Crush or dice 2 cloves Garlic, and add to the fried onion, with 1 teaspoon Paprika and 1 tablespoon Worcestershire sauce.

- Add the drained parboiled cubed potatoes and a generous amount of Salt & Pepper to the dish. . Mix onions and potatoes and fry for about 5 minutes, you want the potatoes to start crisping up.

- Place the cubed Corned Beef on top. Push down flat with a spatula. Cook on low- medium heat for 6-8 minutes. Do not stir!

- Using a spatula flip over in 4-6 sections, flatten back down with a spatula. Cook for another 6-8 minutes on that side.

- Turn off the heat, make four wells in the corned beef hash and crack the 4 Eggs inside. *The egg yolks will be hard when cooked, if you prefer runny eggs fry or poach them instead and add them on top of the corned beef hash after the oven.

- Place pan in the 200℃ fan / 220°C / 425℉ / Gas Mark 7 oven for 10 minutes to crisp off the top and cook eggs.

- Serve up Corned Beef Hash with a Sprinkle of Parsley.

- Eggs - Cooked in the oven for a firm yolk. For a soft yolk, fry the eggs separately while the hash bakes.

If you don't have a cast iron pan, don't fret! Any oven-friendly pan will suffice. Or you can start in a pan and transfer to a preheated oven dish for the last step.
Instructions
We will guide you through how to cook corned beef hash.
Preparation
Start by preheating your oven to 200℃ fan / 220°C / 425℉ / Gas Mark 7 . While it's heating up, peel and dice your potatoes. If you're using canned potatoes, you can skip this step.
Next, cut your canned corned beef into cubes. Don't worry too much about perfecting the cubes – they'll break apart while cooking. Set your cubed potatoes and corned beef aside for now.
Crush, dice, or mince the garlic and dice the onion.
Boil
Place the diced potatoes into a pan of boiling water to cook, they should take about 7 minutes. Drain and allow the boiled potatoes to air dry.

Fry
Grab a large, oven-safe pan (a cast iron one works great) and heat some olive oil in it.
Gently fry the onion in the oil until it's soft. This should take around 5 minutes.

Crush or dice some garlic and add it to the pan.


Followed by some paprika and Worcestershire sauce.

Now it's time to add your cubed boiled potatoes. Sprinkle in a generous helping of salt and pepper.

Then, stir everything together. Let the mixture fry for a few minutes. you want the potatoes to get crispy.
Layer your cubed corned beef on top of the potato mixture.
Press it down flat with a spatula and let it cook on low-medium heat. Remember not to stir at this point! You want crispy potatoes.
Flip

After 6-8 minutes, use your spatula to flip over the potato and corned beef mixture in sections.

Flatten it back down with the spatula and let it cook on the other side for another 6-8 minutes.
Turn off the heat and make four wells in the corned beef hash. Crack an egg into each well. If you prefer runny yolk eggs, you could serve with fried or poached eggs instead.

Oven
Place your pan in the preheated oven for about 10 minutes. This will give the top of your dish a nice, crispy finish and cook the eggs.

Once your corned beef hash is out of the oven, sprinkle some fresh parsley or other fresh herbs over the top. Now, you're ready to serve up your one-pot feast!
