Who doesn't like stuffed Mushrooms? There are endless options for what to stuff with, this particular recipe was decided on based on some leftover Pancetta in our fridge from our Fish Boat Chowder!
So here you have it Delicious Pancetta Mushrooms with Mozzarella. Not many ingredients to pick up for this dish next to nothing to prepare and ready in only 20 minutes!
Perfect served up for a weekend Breakfast or Lunchtime treat! We dished up our Pancetta Mushrooms with Mozzarella for Brunch after a child-free night.
Obviously, having no kids in the house gave us a rare Lay-in! As can be seen illustrated above, we served up with some air-fried Potatoes (recipe to follow soon!).
Guaranteed to fill us up until dinner time.
We probably should have got more pictures of the mushrooms being stuffed. However, we were starving! Next time we will take some prep pictures or videos for you to follow along!
Alternatively, substitute the Pancetta with Bacon or Chorizo.
On the other hand, why not leave out the meat! Opting for a vegetarian cheesy version! Or try our air fryer garlic mushrooms for something different.
Top tip to stop soggy wet Portabella stuffed mushrooms. Clean with a dampened kitchen tissue and rub any dirt away. Never submerge in water to wash them!!
Tips for faster preparation when cooking
We sped up the process of making Pancetta Mushrooms with Mozzarella using
Gia Garlic Puree – pick it up at any UK supermarket, save your time fiddling with peeling, chopping and pressing garlic.
The tube keeps in the fridge for future use. Squeeze from the tube directly on to the Portabello mushrooms! Easy!
There is something so satisfying about melted Mozzarella cheese, cutting, pulling apart and seeing the stringy cheese! Enough said I am getting hungry talking about it!

Pancetta Mushrooms with Mozzarella
Not many ingredients to pick up for this dish and ready in only 20 minutes!
Ingredients
- 4 Portabello Mushrooms
- 1 spray spray oil
- 75 grams Pancetta - cubed
- 2 teaspoon garlic puree - 4 crushed garlic clove
- 100 grams Mozzarella Cheese - grated
- 1 teaspoon Mixed Herbs
- Salt & Pepper to serve
Instructions
- Pre Heat the oven to 220C/200C fan/gas 7
- Fry off the pancetta with a little spray oil for 3 mins, until crisp
- Spread the garlic on all four mushrooms.Layer the cooked pancetta on the mushroom followed by a handful of grated mozzarella.
- Place on a baking tray lined with parchment paper, cook in the oven for 5-8 mins, until the cheese is fully melted
- Sprinkle with dried mixed herbs, salt & pepper Enjoy!!!
