- Prick 2 Sweet Potato with a fork or sharp knife a few times. (you can cook however many will fit in the air fryer in one layer. Do not put on top of each other, they will not cook evenly)
- Place into a bowl. Pour 1 teaspoon Oil over potato skin and rub in to coat the skin evenly in the oil. or use spray oil instead.
- Sprinkle and rub Salt into the skin.
- Transfer potatoes to the air fryer and cook at 200°C / 400°F for 40 minutes. Turn over halfway through cooking.
- To test that they're done, insert a sharp knife into the centre of the potato; if no resistance is met, they're ready to serve. If it is still firm inside, continue cooking at 2-minute intervals.
