The skin gets wonderfully crispy (thanks to our trusty air fryer), while the insides stay soft and fluffy. If you're short on time, you can speed up the cooking process by microwaving the sweet potatoes until soft before air frying. However, keep in mind that the skin will not crisp up. Prick 2 Sweet Potato with a fork or sharp knife a few times. (you can cook however many will fit in the air fryer in one layer. Do not put on top of each other, they will not cook evenly)
Place into a bowl. Pour 1 teaspoon Oil over potato skin and rub in to coat the skin evenly in the oil. or use spray oil instead.
Sprinkle and rub Salt into the skin.
Transfer potatoes to the air fryer and cook at 200°C / 400°F for 40 minutes. Turn over halfway through cooking.
To test that they're done, insert a sharp knife into the centre of the potato; if no resistance is met, they're ready to serve. If it is still firm inside, continue cooking at 2-minute intervals.
Remove and serve with your chosen toppings.
Quicker Microwave and Air Fryer Method (No crispy skin)
Prick each potato with a fork or sharp knife a few times. Place on a microwaveable plate, cook on high, turn once halfway through; Time varies depending on how many you are cooking at once, microwave power (use high) and the size of your potatoes.Times are based on large 290 gram (10.2 oz) potatoes1 Potato - 4 minutes2 Potatoes - 6 minutes3 Potatoes - 8 minutes4 Potatoes -10 minutes
Use a knife to check they are soft all the way through. Cook in 1-minute intervals from now on until soft. Depending on the potato size you have used, you may need to cook it longer.Toss them in a bowl with 1 teaspoon Oil and Salt.
Place them in the air fryer basket.Cook at 200°C / 400°F for 8 minutes, to crisp the skin slightly.
