Homemade mix for Chunky Chocolate Chip Brownies
The secret to fantastic chocolatey brownies is in the mix. You can buy store-bought brownie mix, but we find it best to make our own mix-up.
Consisting of sugar, butter, vanilla extract, eggs, cocoa powder, flour, baking powder and salt. This will give you a fudgy gooey brownie texture.
First, melt the butter on low power in the microwave. You do not want to heat the butter, so keep microwave low and do in 30-second intervals stirring each time.

Mix melted butter together with the sugar. Followed by whisked eggs and vanilla extract. Give the mix a really good whisk together.

Next add all the remaining ingredients (except the chocolate chips)

We also add chunks of good quality cooking chocolate with the brownie mix. It is best to use chunks of cooking chocolate in the mixture as they melt slowly inside the brownie.

Fold the wet and dry ingredients together until the flour is no longer visible, you don't want to over mix it.
What to bake Brownies in?
Bake in a baking pan, we use a 22 x 33 cm (9 x 13 inch) baking pan. Square pans work well too.
Aluminium baking pans will give the best results as they are thin, cooking the brownies quickly and evenly.
Once the brownie mix has been mixed pour into the baking tray.

Should I line pan when baking chocolate brownies?
When baking brownies it is best to line the pan with parchment/baking paper before putting the brownie mixture in.
Make sure the paper is cut larger than the pan to make it easier to pull out when the brownie is cooked.
Alternative to parchment/ baking paper?
If you have no parchment/ baking paper, use non stick foil instead. It works just as well.
Or if you really need to you can just grease the pan with oil or butter. But be warned it will be harder to remove from the pan!
When to add chocolate chips to Brownies?
Add chocolate chips on top before placing in the oven, they will hold there shape better than ordinary cooking chocolate.

How long to cook Chocolate Brownies for?
All ovens are different so keep an eye on them towards the end of cooking. They are cooked when the top looks shiny and cracks have started to form on the surface.
Normally between 25-30 minutes.

My brownies aren't cooked in the middle?
This is normal, when the brownies first come out of the oven the middle should be set (not wobbly) but it is ok for them to be soft still.
If you test with a toothpick, like you would with a normal cake, they will still be moist.
This is normal, they are not undercooked. They simply need to cool down and then they will firm up.
When and how to cut brownies?
Never cut brownies straight out the oven! They need to cool down to firm up first. Leave them in the pan you cooked them in for 1- 2 hours before slicing.

Pull the brownies out of tray using the parchment paper and slice into squares or rectangles with a sharp bladed knife.
How to store Brownies?
Store in an air tight container at room temperature for up to 2 days.

What to serve with Chocolate Brownies?
Chocolate Brownies are great as they are, however if you want to spruce them up, there are many things you can serve with Brownies.
Such as single cream, whipped cream, custard, chocolate sauce, raspberry sauce, fudge sauce, fresh fruit.

However by far our favourite way is warmed up with a scoop of vanilla ice cream and chocolate sauce.

I'm incapable of resisting a brownie. They are just so very tempting. Love your large chocolate chunks thrown in so that they melt slowly into the brownie, but you still have bits of chocolate to chew on too.
