Made with carrots, onions, potatoes, spices and fresh coriander. But we like to add chilli and garlic, making it a spicy carrot and coriander soup recipe.
Easy to make and only requires a few roughly chopped ingredients, a large pan and a stick blender.

Spicy Carrot and Coriander Soup
Ingredients
- 30 gram Fresh Coriander
- 1 tablespoon Olive Oil
- 1 Onion
- 2 cloves Garlic - ๏ปฟfinely diced
- 1 small Red Chilli - Optional - adjust amount used to your desired taste
- ยผ teaspoon Turmeric
- ยฝ ๏ปฟtsp Cumin
- 500 grams Carrots - peeled and roughly chopped
- 1 large Potato - about 300g - Peeled and diced
- 600 ml Vegetable Stock
- Salt and Pepper
To serve (optional)
- 1 swirl Single Cream - Crรจme Fraรฎche or Double Cream can be used.
- 1 pinch Paprika
Instructions
- Separate the 30 gram Fresh Coriander leaves from the stalks. Chop the stalks to use for cooking. Keep the leaves aside for garnishing the finished soup. Finely dice 1 Onion, 2 cloves Garlic, 1 small Red Chilli. Roughly chop 500 grams Carrots and 1 large Potato.
- ๏ปฟHeat 1 tablespoon Olive Oil over medium-low heat in a large saucepan and sautรฉ the diced onions for 5 minutes.
- Stir through diced garlic (and chilli if using) for 2 mins
- Season with Salt and Pepper, ยผ teaspoon Turmeric ยฝ ๏ปฟtsp Cumin and the coriander stems and stir through.
- Place chopped carrots and potatoes in the pan stir, and saute for 5 mins.
- Pour 600 ml Vegetable Stock in and bring to a boil
- Lower heat to simmer.Cover the saucepan with a lid and simmer for 20-30 minutes.
- C๏ปฟheck the vegetables have softened enough to be blended?
- Blitz with a stick blender.Or transfer it into a food processor.Blend until smooth and lump-free.
- Season to taste with more Salt and Pepper if needed.
- Pour desired amount into large bowls and garnish with the fresh coriander leaves
- Optional Extras- Add 1 swirl Single Cream for extra creaminess.I also like to add a 1 pinch Paprika sprinkled on top.

Ingredients
The ingredients needed to create carrot and coriander soup are as follows.
- Coriander is essential for this soup. Use fresh coriander leaves and stems. The stems provide a robust flavour during cooking, while the leaves are perfect for garnishing. If using dried or ground coriander, use less as it is more potent.
- Olive Oil - Any oil or butter works. Spray oil is a good low-fat option.
- Onions - Brown onions are commonly used, but any type works.
- Garlic - Adds depth of flavour. Fresh garlic cloves are best but puree or garlic powder could be used instead. You can omit garlic.
- Chilli - Red chillies make this carrot and coriander soup spicy, but chili flakes can be used instead. Add more chillies for more kick.
- Spices -Turmeric gives a beautiful yellow colour, and cumin adds warmth. Adjust spices to taste. Paprika can be added for extra colour and sweetness.
- Carrots -The main ingredient. Choose firm, bright, young carrots. Smaller carrots are sweeter and may not need peeling. Peel and chop into rough chunks.
- Potatoes - Peel and roughly chop. Potatoes help thicken the soup.
- Vegetable Stock - Use vegetable stock for a vegetarian or vegan-friendly soup. Chicken stock also works well for extra flavour.
Blending Soup
Use a stick blender to blend the soup until it is smooth. Or, if you don't have a hand blender, transfer the soup to a large blender and blend until smooth.
Reheat the soup before serving.
Soup Toppings
Once cooked, it's time to add the soup toppings.
The most common toppings are salt and pepper to taste. Chopped fresh coriander leaves and a swirl of cream or crรจme fraรฎche help make a creamy carrot and coriander soup.
Other delicious toppings include crusty bread, seeds, croutons, seeds, and for the meat-eaters crispy bacon we make ours in the airfyer. Make the carrot and chilli soup even spicer by adding more chilli flakes on top.
Get creative and experiment with different toppings! You can substitute cream for coconut milk if you are vegan.
Serving Suggestions
Serve with some fresh bread or croutons on the side. It also goes well alongside our dough balls. Enjoy!
