What Mushrooms to use?
We like to use chestnut mushrooms as we find they have a stronger flavour and firmer texture than plain white mushrooms.
However you can use any variety of mushroom you wish.
How to clean mushrooms?
To stop the mushrooms soaking up too much water, simply dampen a kitchen towel and use that to rub over the mushroom surface.
Why cook mushrooms with wine, and which wine to use?
Wine helps to release the delicate flavours from the mushrooms and gives the finished sauce a delicious taste.
I do not ever use cooking wine..... My mentality is if it doesn't taste good enough to drink why ruin your recipe with it?!
We personally love wine and always have it in the house. So we use the wine that we would normally drink, in our dishes.
Substitute for wine? Grape juice?
If you want to create this dish non alcoholic, simply substitute the wine, with the same amount of white grape juice.
Adding flavour to mushrooms with garlic and sundried tomato.
We used garlic puree to add to our mushrooms and also added sundried tomato puree for some extra richness.
How to make a creamy sauce for mushrooms?
Single cream and stock added together and heated gently (do not allow to boil vigorously) to make a delicious creamy sauce for mushrooms.
What cheese to use with mushrooms?
We use Parmesan to give a strong cheesy flavour, you can use Grana Padano, Romano Cheese or Parmigiano Reggiano for similar result.
I have never tried using a milder cheese as I prefer strong cheeses. But, if you wanted to try, I suggest using a cheddar.
However, the first time I tried this was in a lovely pub in the Cotswolds. Ordered as a starter it was topped with delicious blue cheese.
Blue cheese is fabulous and gives this dish a really strong flavouring. Luke sadly is not a lover of blue cheese. So we used parmesan in our version instead.
If you wanted to use blue cheese, crumble it in the sauce instead of the Parmesan.
Or use parmesan for sauce and just crumble blue cheese on top before melting under the grill.
Serving ideas for cheesy mushrooms in creamy garlic sauce.
Sprinkle with extra Parmesan (or your chosen cheese) and grill to create a fantastic first course / entree / starter.
Alternatively, use as a pasta sauce, or poured over steak or chicken. Or serve Cheesy Mushrooms in creamy sauce up on toast for a super special breakfast.
What to serve with Cheesy Mushroom's as a starter?
Sprinkle with parsley and serve straight up in the dish you cooked it in.
Best served up with fresh bread, perfect for dipping into the cheesy sauce. We choose a Olive bread. Check out our Homemade White Cob Loaf or Olive & Herb Focaccia Bread to make your own bread.

Cheesy Mushrooms in a Creamy Garlic Sauce
Equipment
Ingredients
- 50 gram Butter
- 260 gram Chestnut Mushrooms - halved or quartered
- 80 ml White wine
- 1 teaspoon Sundried Tomato Puree - substitute with regular tomato puree
- 2 tsp Garlic Puree - 2-3 crushed cloves
- 100 ml Single cream
- 150 ml Chicken /vegetable stock
- 4 tablespoon Parmesan Cheese
- salt and pepper
Instructions
Creamy Mushroom Sauce
- Saute mushrooms in butter for about 4 minutes
- Add wine and allow to reduce should take about 3 minutes.
- Add garlic and sundried tomato puree, stir through.
- Add cream and stock, stir through
- Add parmesan and season with black pepper heat on low for about 4 minutes. Do not allow the cream to boil.
Serve as it is for a sauce over meat or continue instructions below to create a mushroom starter
- Divide into 2 tapas style dishes and sprinkle with parmesan or your chosen cheese? Grill for 5 minutes.
- Serve with bread

I have not tried for this dish before, but for other creamy sauces, I would usually reheat in a pan over low heat. Stirring until warmed through adding water if needed.
So I would suggest making it up to step 5, allow to cool, then store in the fridge.
Then the next day, reheat in a pan over low heat, adding little splashes of stock or water if too thick. Once warmed through, then continue with the oven stage.
