Delicious and easy to make Dark Chocolate Truffles. Get the whole family involved in making (and eating) these. Perfect gifts for Christmas. Why not add some Liquor to them!

Toppings - There are so many options!! Cocoa Powder, nuts, sprinkles, coconut, dipped in chocolate, grated chocolate, chocolate strands, sugar strands, icing.
Why not switch the vanilla extract for 1 tablespoon of your favourite liquor
Break the 200 g Dark Chocolate into small chunks (to help it melt quicker) Put into a heat-proof bowl.
In a small jug warm ½ tablespoon Butter and 75 ml Double Cream together in the microwave. Do not allow it to boil.Start with 30 seconds stir and keep adding 10 seconds more until hot. Pour hot cream on top of the dark chocolate in the bowl
Pour boiling water into a bowl larger than the bowl containing the chocolate butter and cream.Place the smaller bowl into this tub and carefully stir the cream and dark chocolate until smooth and glossy. Do not allow any of the boiling water to splash into the mixture.Optional* Add ¼ teaspoon vanilla extract or a splash of liquor.
Once well-mixed, place in the fridge for at least 2 hours (do not cover this will create droplets of water which will ruin the mixture)
Use a teaspoon to scrape about 2 teaspoon of truffle mixture into your hand. Now roll it into a ball. It will be sticky, try not to spend too much time rolling as they will melt!
Now choose your toppings, roll the truffle ball in your topping and place it in a paper or silver tray.
Eat immediately or store in airtight container/bag in the fridge until needed! (Will keep for 2 weeks)
