Remove 200 g Butter from the fridge to soften before starting, cut into cubes to speed up the time to soften.
Line a 32 cm/12 ½ inch pizza tray with parchment paper use a dap of butter to keep the paper stuck down. Preheat the oven to 150℃ fan / 170℃ / 350℉.
Place softened butter in a cake mixer with 200 g Granulated Sugar and 200 g Light Brown Sugar.
Cream butter and sugar together using a paddle attachment. It can be creamed together using a wooden spoon or rubber spatula if you do not have a mixer. It should be smooth, light and fluffy before adding extra ingredients
Add 2 Large Eggs and 1 teaspoon Vanilla Extract.
Add 300 g Self Raising Flour Fold in with a wooden spoon until all combined. Do not over-mix.
Now stir in 200 g White/Milk/Dark Chocolate Chips (we like to add a mix of white and milk chocolate chips).
Shape the chocolate chip cookie dough onto the lined pizza tray using a spatula or wooden spoon.
Top with the remaining 100 g Milk/White/Dark Chocolate Chips
Place in the preheat oven at 150℃ fan / 170℃ / 350℉ bake for 35-40 minutes
Once cooked, it will likely still be soft in the middle, it will firm up more as it cools.
Keep cookie on tray whilst it cools enough to remove.
