Instructions
Finely dice 1 Onion and 5 cloves Garlic and roughly chop 250 g Mushrooms.Heat ½ tablespoon Olive Oil in a large frying pan, saute the diced onion, diced garlic, chopped mushrooms and 500 g Beef Mince until the mince has browned. Breaking down the mince using a wooden spoon whilst browning.
Transfer it all to the slow cooker pot. Feel free to drain some of the fat away if you want a healthier meal.
Mix 1 Beef Stock Pot with 250 ml Boiling Water and add to the slow cooker.
Drain the liquid from 1 tin Kidney beans and 1 tin SweetcornAdd to the slow cooker pot with,1 tin Chopped Tomatoes, 2 tablespoon Tomato Puree and stir well.
Add the herbs and spices.1 tablespoon Hot chilli powder1 teaspoon Ground cumin1 teaspoon Ground cinnamon1 teaspoon Salt and PepperRemove the leaves from the stalk of a Small handful Fresh Coriander chop the stalks and add to the slow cooker. Keep the leaves for garnishing once cooked.
Give it all a good stir and place the lid on.Cook on:Low heat - 6 hours (gives the best result)High heat - 4 hours.Do not open the lid during cooking, it will not need stirring!
Once finished, remove the lid and stir; it is ready to serve.If you want a thicker chilli, leave the slow cooker on low for 30 minutes with the lid off to evaporate some liquid.
Serve with your choice of sides and a sprinkle of chopped coriander leaves on top.
