165gRaw King PrawnsPeeled
3clovesGarlicdiced
1Red Chilli Pepperdiced
SmallHandfulFresh Coriander Leaves and Stems (Cilantro)
3tablespoonSweet Chilli Sauce
1Limecut into wedges
Salt & Pepper
4Soft Taco Wrapsor Tortilla Wraps
Salad (Adjust to what you like)
¼Red CabbageShredded
¼CucumberThin batons
½Red Pepper (Bell)Finely sliced
½tinSweetcorn
1CarrotGrated
2Spring OnionsSliced lengthways

1tablespoonPeanutscrushed
1Fresh Chilli Pepper Finely sliced

Instructions
Prepare salad items. You can change salad items used to suit your taste. We used ¼ Red Cabbage, ¼ Cucumber, ½ Red Pepper (Bell), ½ tin Sweetcorn, 1 Carrot and 2 Spring Onions
With the Small Handful Fresh Coriander Leaves and Stems (Cilantro) Remove coriander leaves from the stems to add to the salad.Finely dice the coriander stems and the 3 cloves Garlic and 1 Red Chilli Pepper.
Bend the 4 Soft Taco Wraps into a u-shape and rest against each other. Prop the two end ones up with lime wedges cut from 1 Lime.Fill with salad items and coriander leaves.
Remove excess liquid from 165 g Raw King Prawns using kitchen paper towels.
Heat 2 tablespoon Olive Oil in a frying pan. Add prawns and cook on one side for 3 minutes.
Turn to the other side and add the chopped coriander stems, garlic and chilli, you prepared earlier. Cook for additional 3 minutes, until prawns have turned pink throughout
Add 3 tablespoon Sweet Chilli Sauce and a small squeeze of lime juice.
Stir through until warmed through. Season with Salt & Pepper.
Divide the prawns evenly on top of the salad in the taco shells. Spoon the sauce over the top.
Optional Extra Toppings -Like them spicy? Add 1 Fresh Chilli Pepper finely chopped or 1 teaspoon Chilli Flakes.Want an extra crunch? Sprinkle some 1 tablespoon Peanuts crushed on top.Serve with a wedge of lime so people can add more sourness if desired.
