Add frozen peas to a pan of cold water bring to a boil. Once the water has boiled, turn to a simmer and cook peas for two minutes.For extra flavour cook peas in stock instead.
300 grams Frozen Peas
Drain the peas - reserving some water (or stock) to add back during blending.
Place peas in a food processor or bowl for hand blender, add butter, salt and pepper. Plus any additional flavourings you are using.In this example, we have added mint jelly for a minted pea puree.
Salt, Black Pepper, 1 tablespoon Butter, 2 teaspoon Mint Jelly or Sauce
Blend, adding splashes of the reserved water (or stock) during blending until it reaches your desired consistency.
Optional: for a smoother puree push the blended peas through a fine sieve. Using a silicone spatula helps push the sauce through the sieve.
Transfer to a serving dish or use on the plate as a sauce
