Gather equipment. If cooking your steak first, use the juices left in the steak pan to add extra flavour to your mushroom sauce.Gather and measure all the ingredients.
Clean the mushrooms using a wet kitchen paper towel (this prevents them from soaking up water.)Thinly slice the 170 grams Baby Button Mushrooms.
Finely dice 1 Small Red Onion and 2 cloves Garlic.
Melt the 30 Grams Butter over a medium to high heat
Cook the finely sliced mushrooms for 5 minutes.
Add the diced garlic and onions and cook with the mushrooms for 10 mins.
Add the leaves from a few sprigs Thyme.
Stir in 500 ml Beef stock and 1 tbsp Dijon mustard
Season with Salt and Pepper.
In a small bowl, stir 1 tsp Cornstarch with 1 tablespoon of tap water until smooth. Then add into the pan.Stir together and bring to a boil.
Add in 60 ml Double Cream and stir through until warmed. (Do not boil)
