Peel and chop 550 grams Parsnips into even-sized pieces place in a large bowlPreheat oven 200°C fan / 220°C / 425°F / Gas Mark 7
In a small bowl, mix 2 Tablespoons Olive Oil, 2 Tablespoons Honey, 1 Teaspoon Crushed Garlic and season with a pinch Salt and Black Pepper. Combine together.
Pour the homemade glaze over the top of the parsnips and stir through
Line a baking tray with parchment paper, add the glazed parsnips making sure they are not touching.
Oven bake at 200°C fan / 220°C / 425°F / Gas Mark 7 for about 25-30 minutes, or until golden brown. If you have other dishes cooking in the oven at the same time, it may take up to 35 minutes.
For best results turn halfway through.
Serve with a sprinkle of leaves from 2 Sprigs Thyme, and season to taste with salt and pepper
