Instructions
Hard Boil Eggs
Start with 4 Large Eggs at room temperature. Place them in the bottom of a saucepan. Pour in tap water so they are submerged by about an inch of water.
Turn the heat to high and bring the water to a gentle boil. Once the water bubbles, reduce the heat to a simmer. Put a timer on for 8 minutes for the eggs to cook at a simmer.
Now drain away the hot water and refill with cold water, this helps to cool the eggs quickly. Leave for a few minutes to cool.
Tap the cooled hard-boiled eggs gently all around on a hard surface to crack the shell all over.
This loosens the shell, making it easier to peel.
Chop the whole hard boiled eggs whites and yolks into bitesize pieces.
Egg Mayo
In a large bowl, put the basic egg mayo sauce ingredients. 4 Tbsp Mayonnaise with a pinch Salt & Pepper. *OPTIONAL- I also like to add 1 tsp Dijon Mustard and 1 pinch Paprika for extra flavour.
Mix together.
Now add in the chopped boiled eggs
Gently combine the eggs with the creamy sauce. You can add extra mayonnaise to your desired creaminess.
Optional Extras
Here are a few more extras to choose from and add to your egg mayo.1 tbsp Chives, 2 slices Crispy Bacon, 1 Gherkin, 1 small handful Cress, ½ tsp Chilli flakes
We used 2 slices Crispy Bacon and 1 tbsp Chivesto add extra flavour.
Stir to combine and your egg mayo is ready to serve in a sandwich, on toast, as part of a salad or in a baked potato.
Egg Mayo Sandwich Filler
We used ours in white bread to make an egg sandwich.
