Chocolate Chip Rock Buns

Chocolate Chip Rock Buns are an easy cake to make with kids.
Perfect afternoon tea cake idea or if you are looking for easy things to bake with few ingredients!

Ingredients

  • 300 grams Plain Flour
  • 1 ½ teaspoon Baking Powder
  • pinch Salt
  • 80 grams White Sugar + extra to sprinkle on once baked Caster or Granulated can be used
  • 150 grams Butter
  • 200 grams Chocolate Chip We use 100 g White Chocolate Chips + 100 g Milk Chocolate Chips
  • 1 Large Egg
  • 2 tablespoon Milk
  • ½ teaspoon Vanilla Extract

Instructions

  • Preheat Oven to 190°C /170°C fan/ 375°F.
    Add 300 grams Plain Flour, a pinch Salt and 1 ½ teaspoon Baking Powder into a bowl

  • Add 80 grams White Sugar and mix these dry ingredients together.

  • Rub 150 grams Butter into the dry mix using your fingertips.

  • Until it has a breadcrumb texture.

  • Add 200 grams Chocolate Chip.

  • Stir through until evenly combined.

  • In a small bowl whisk together 2 tablespoon Milk, 1 Large Egg and ½ teaspoon Vanilla Extract

  • Add this whisked mixture to the dry ingredients

  • Use a fork to stir well together until moist and sticky

  • Separate into approx 9 even-sized buns, and use the prongs of the fork to rough up the edges of the buns a little.

  • Cook in a preheated 190°C /170°C fan/ 375°F oven for 15-20 minutes until golden.
    Remove from oven, allow to cool and firm up.

  • Once cool enough to handle, transfer buns to a wire rack.

  • Sprinkle with some extra sugar. Eat whilst still warm.

  • Or allow to fully cool then store in an airtight container until ready to eat.
